Single vineyard at Yering Farm Wines
Winemaking
Handpicked and selected parcels of fruit were gently crushed with a small proportion of whole bunch and placed into open top fermenters. First a cold maceration followed by daily hand plunging of the grape skin cap to help extract colour and build structure during the fermentation. Then pressed to rest and develop in a mix of new French oak and seasoned barriques for 12 months.
